She’s totally right about where and how much we deposit fat being crucial. In fact it pertains to disease etiology (cause), progress and reversal!
Where I disagree with her is that replacing SFAs with MUFAs (or PUFAs) as general dietary advice is sound. Not only is this not necessarily a desired effect, but even when it can be argued to be, the effect is rather small. Most evidence is from clinical anecdote. I think the better question is about ‘which food sources of fats?’ rather than SFAs vs MUFAs for example.
