I don’t know if it’s a case of some or all of the following ==> (a) too much fat (b) the wrong fats © low(ish) protein
82% fat is very high-fat and means you’re eating 18% protein at the most and 13% protein at the least, if you’re eating 5% carbs. Your protein intake is most likely too low. Of course, % are only somewhat helpful – how many fat/protein grams are you eating? How tall and heavy are you? Do you know what you average total daily kcal intake is?
I can’t say whether your low(ish) protein diet is related to the fatty pancreas, also because I don’t know what kind of fats you’re eating which could impact your pancreas (e.g. canola oil or butter?).
So I have 2 questions which may help me and others help you out:
